
This brilliant but wealthy therapy for scallops got here to The Instances in a 2009 article about Kevin Zraly, the wine director of Home windows on the World from 1976 to 2001. Mr. Zraly turned the restaurant into a world wine mecca: on the time it was destroyed, when the World Commerce Middle fell, its cellar held near 100,000 bottles of 1,500 labels. Mr. Zraly and Michael Lomonaco, the chef on the restaurant (each of whom weren’t at work on Sept. 11 when the planes hit), labored collectively on lots of of wine and meals pairings all through the years.
